Sheer curiosity - anybody know a way to get this to work without the bread? Starch and I just don't get along, and most of the substitutes don't work too well.
For this particular hors d'oeuvres, the bread performs the essential functional of a structural component and binding agent for the other constituents. If the starch is the issue, you could replace the bread with another structural component, perhaps a vegetable wrapping like spinach leaves. However, this will alter the taste, although that actually sounds good to me.
Note to self: try: Spinach leaves, eggplant strips, proscuitto (y'know, just for kicks) - nevermind, I figured it out. Core bell pepper, stuff in bell pepper, bake, call it a day.
