The worst thing that could happen next is that the infection would mutate

Isn't anthrax a poison caused by a spore? It can't mutate in that case right?

It's a bacteria which forms spores and creates poison. Mutations can occur, but I doubt it.

But since it's a poison and not an infection, it can't mutate. It's like asking alcohol to mutate.

The bacteria can mutate. I don't know how much a difference that would make. The worst thing would be if it became antibiotic resistant.

But if it's not the bacteria directly causing the harm, what's the problem?

The bacteria excrete the poison once they're in you. Anthrax treatment consists of antitoxin and antibacterials. If they can't get rid of the bacteria, they'll keep producing toxins, making the situation harder to handle.

Of all the possible outcomes of climate change, anthrax epidemic isn't exactly what I'd expect.

That's the problem with global warming, it has so many small but in the end fatal effects that we can't even grasp the whole impact
