It's pretty great to do this with tomatoes. Especially if you cook a traditional bolognese sauce for 8.

Not long. You scoop the potato up and pinch at the skin. If it seems kinda loose, it's ready for the cold water.

But doesn't this apply only to thin peel potatoes. You probably have only that sort. I need some south Americans with 20ish sorts to share their thoughts on thiis.
