I don't get it. Why make the characters older simply because you think only adults remember it?

You don't have to "play on nostalgia" to make good characters. The Incredibles was a kid's movie that centered on a grown man. It would be good if the characters aged, but it's not a mandatory thing in order to make a good movie.
I'm not an adult and the incredibles was one of my favorite movies ever. I have seen it so many times that I can recite dialogue along with the characters.
