As cute of a sentiment as this is, being nervous and seeming nervous are two very different things. I know that I have gotten good at hiding my anxiety, including talking to people who make me nervous as if nothing is wrong.
And many people who work in my field have trained calm level responses to crisis. Its natural human reaction to either defend yourself (protect your face, leave) or fight back (either more violently or with body language even)when someone else is attacking you. Neither is a helpful response in calming a person down who has picked up a chair with intentions to beat someone with it. With trust built relationships and the training to stay calm and even, staff have talked down many a potential problem.
And when your day job is talking down people with mental illness from violence, staying calm in the face of a pretty stranger isn't very hard, even if you are anxious.
I know not everyone can do this, just maybe don't assume no one can.
