This is the mature, adult way to handle and indulge an SO's curiosity or other side.
However, you must also account for the slightest possibility that she may fall for her or another. You need to prepare yourself for the chance you might have to let her go.
15 years and three kids is a lot to let go of, I understand where you're coming from thought.

But if you walk in on her with out her telling you beforehand, it's clearly cheating. If you'll just brush off cheating with watching the rest of it, that doesn't seem like a stable relationship

Ymmv but in our case that situation would be a surprise planned for me they would be just starting. 15 years she knows me very well. I would have " caught them".

If it wasn't agreed upon prior, as in to have an "open" relationship, regardless of identity or orientation, it's cheating.
However, should an interest outside the relationship be sparked outside your usual preferred identity and orientation, that may be forgivable... but it should still be talked about first.
