A degree may prove that someone is willing and able to set a goal, even if arbitrary, and go through the motions to reach it. Sadly due to the state of higher education and the variance in quality of education even the same 2 people can receive at the same school in the same major- all the possible ways to work the system, cheat, and Brown nose- a degree doesn’t tell me you can do the job. I’ll put my stock in experience over education every time. If you’ve done a job in one place for some number of years I have to assume that you are capable or you’d have been let go when proved a fraud. If my only choices are two inexperienced candidates- one with higher education and one without- the edge will go to the one with the degree as at least they have some endorsement, but a few interviews with challenge questions would make the decision. That said it is still better to have a degree than not all other factors being equal.
