I dont understand why they're so expensive. I bet publishers just want to take in as much money as they can

They have a captive audience. The professor requires a specific version of a specific book and students are obligated to buy it. When the secondary market of used books gets large enough they just release a new version. Then everyone has to buy new again.

In my country you don't have textbooks in college (unless you're taking medicine or law, something like that) and I'm counting my blessings.
