Wow, imagine actually paying people what they earn.

How do you define what they earn?

The monotry value of total profits excluding wages proportional to amount of total work done over the period of which they worked.

That makes it sound like they didn't earn their wage.

If it's gratuity free, does not mean you have to pay? Or did I seriously misunderstand something?

It means you don't have to pay a tip.

It's weird to see stuff about tipping when you've never been anywhere that actually expects tipping instead of giving a reasonable wage to waitstaff.

I honestly enjoy tipping, actually over-tipping. I spent a lot of years working at jobs that had a gratuity component; I remember the pleasure I got from receiving a large tip. It was more than the money, it felt like actually being seen. Now that I actually have a reasonably well paying career, it feels like a responsibility to use a portion of my resources to help or make others happy. I get that some of it may just be feeding my ego, but I also know it feels right and I never felt bad about getting a good tip, regardless of the person's motivation.
