Easy. If she’s not sitting at the bar and you know her name you just walk up and order drinks, say “the tab is for <her name>“ and then walk back with the drinks.

Well technically he was ordering and delivering the drinks. She was paying for them.

Yeah, so again, how do you buy someone a drink on their own tab? I don’t think a decent bartender would let that happen.

Depends on how busy the bar is, I suppose. And if you are ordering the same drink she initially ordered then they might not think anything of it. I can’t tell from the wording if he was putting his drinks on her tab too, so maybe he was saying “this one goes on mine and that one goes on hers”.
