So you can't actually turn the mic off on your phone. What you can do is tell programs not to listen or not to respond. This also means that anyone that "hacks" your phone can listen to everything it hears. If you truly don't want the mic on you have to pull the battery. Of course many modern phones don't let you do that so I suppose you could always smash it with a hammer.

Or just get a pin and jam it in any mic you can find. If you destroy the mic, and stop it receiving signals, that'll work. But, good luck calling anyone.
