I think it's b/c in Chinese, five is 五 (wu), which requires five strokes to write. They just moved 4th stroke to make it more distinct. Japan and Korea also adopted this character with their own histories.

五 is 4 strokes though:
ー / 7 ー
正 "correct" is just a generally "good" kanji and probably chosen for that reason.
