How do these companies know they are not helping dangerous criminals escape prosecution? Is that just not a thing they have to plan around?

Not their job to thoroughly investigate their potential clients before rendering their services. Just like cabs, Ubers, busses, trains, etc, MIGHT "help" a criminal flee local cops and jurisdictions, the overwhelming majority of the clients aren't dangerous criminals, and just like the aforementioned services, there's no client-service provider privilege when the cops ask.
