It's not everyone is gluten allergic. My friend is glutton allergic so her entire family went gluten free to make cooking meals easier. Sometimes it's that. Then there are the people that somehow get it in their brain that gluten is bad for you and they go gluten free. Those are the people I mostly run across when they say they are gluten free.
I think he's talking about people who are not allergic, but make it a fad diet.

People can develop allergies throughout life, my aunt was never allergic to shellfish until she had her first kid, now she's deathly allergic to shellfish. :/ a sad life if you ask me
Ueah it was pretty crazy and I can't remember what the doctors called it, but after her pregnancy her body was intolerant of any kind of shellfish. She pretty much steers clear of seafood altogether now
No I'm being serious. She has struggled to keep food down for ages, but then during pregnancy she got huge cravings for Maccas cheeseburgers so just went with it and she was okay..baby is almost 2 and she's still alright!
Hey did you guys know that after having a baby, you can't jump on a trampoline without peeing yourself a little? True story.

Also, the wheat we eat today is different. Ancient wheat had 14 chromosomes. the wheat we consume today has about 42. Down Syndrome in humans is a matter of one chromosome. Imagine how a difference of 28 chromosomes could change wheat and its' health impacts.
It's actually nice that it has become a fad diet. It has brought more understanding and more options to those of us that really can't eat gluten. Before it was quite difficult to find stuff that was gluten free and I would always feel guilty when I mentioned that I had celiac and needed gluten free food because it was also more expensive. Since the fad diet more options are available and also some of the prices have come down a bit.
It's due to the use of anti bacterials and over hygienic practices. Children aren't exposed to bacterium that helps build resistance and develope allergies. Also this probably did exist but wasn't able to be diagnosed until this century.
Um...no? Celiac is an autoimmune disease not an allergy. The gluten damages the inner lining of the digestive tracts causing a lot of other things problems throughout the body. Its like diabetes, you can't get it from not touching a lot of bacteria as a child.
Sigh* not what I said. A lot of allergies today are due to lack of bacterial exposure. With celiac and other auto immune diseases this lack of exposure in babies can lead to issue with immunity due to lack of probiotic bacteria in the gut, it's called the "hygiene hypothesis" , look it up it's an interesting theory.
Yeah. Plus there's growing evidence that people with the "wrong" types of bacteria in their guts are more prone to autoimmune diseases, diabetes, obesity. They're calling our microbiome an organ.
