Notice the knife is near the knot, it doesn't pop when you poke it around there.

Did you let the chocolate cool first? You can put a piece of tape on the balloon and puncture it through the tape. It keeps the balloon from popping too fast.

Put a piece of masking tape near the top, put a pin through it.

It looks like they used a plastic bowl rather than a ballon. Notice the shape and thickness. I really have no idea how they went about this

You are supposed to rest one end of the balloon on a bowl, otherwise it would roll around before the chocolate sets.
