Well, a person might ship a non canon (not true) ship, even though other ships may be canon. For example one might ship Harry/Hermione, but that's not a canon ship, while Hermione/Ron and Harry/Ginny are. Canon basically means that the author of a book (or director of a movie) wrote them to be together, while you might ship characters that aren't in a relationship ^^
