My ex has celiac's. But I have no idea what the hell an alert dog is?

Ok apparently this is a thing. These dogs are trained to sense blood sugar spikes in diabetics, they can tell when an epileptic is about to have a seizure, and apparently they can sniff out gluten for someone with severe Celiac's.

I am a 14 yr old with severe Celiac Disease, and I have never even heard of this. I think it would be suuuppppeeer awesome though.
