I've gone to two Catholic schools and I've never gotten the impression that they were in any way against science. The Catholic church has nothing against science. I honestly don't know why this seems particularly Catholic to you; I assumed it happened in some small school in the US somewhere.

the catholic church says they fully support science because "truth cannot contradict truth" (scientific truth can't contradict the bible apparently because the bible is also apparently undeniable truth)

Except there are multiple instances of direct contradictions between what the bible says and what science says. For example The Theory of Evolution and Creationism directly contradict each other.
