For the tips: a 10% tip is a crappy tip in the US. This should be reserved for a sub-standard experience. Also, never base your tip on the quality of the food. Don't make the server suffer because the cook is an idiot. Tips should be based solely on the quality of the server's performance. I usually try to tip somewhere in the 15-20% range, and if the service was especially awesome, I give 25%.
I worked as a bartender/DJ (for fun more than anything else really) I put a tip jar on the bar with the note on it: "Beer, tip and tits motivate my ass."
