The reason for this is probably the same reason the katana was developed: Pre-globalism, Japan had very little access to iron, and what was available was very impure and brittle. Hence, nails, bolts, screws, etc were not a practical option for most buildings. Trying to weasel a large quantity of functional nails out of a pig iron deposit would be making their job WAY harder than it had to be.
