It isn't an instant thing it takes a long time to turn a body to ash.
Most likely a flamethrower will force the zombie's body to cook like a piece of meat, his muscles will become stiff and unable to move which will make him fall to the ground. And even that will take time.
Or it could wander into a wood frame structure you are using as a safe place. Flamethrowers or burning of zombies should always be in a controlled environment. A trench or an alley between two concrete buildings.
What about movies where there was crawling zombie hands not attached to the body but still was able to move? What if the zombies we get are those kind?

Well those movies tend to involve demonic possession of some sort.
depends on the weapon intensity. a Molotov will just make the situation worse as it provides a large flame but a weak one. Standard flame throwers are split into two categories, gas based and liquid based. in this sinario actually the military liquid based flame throwers would be less effective. the liquid allows for a longer range however it means that the flame isn't focused. a civilian gas based flamethrower uses condensed propane that can be focused using a nosel and a spark.
