How about this garlic fact: I once peeled about half a pound of garlic that was so intense that it literally burned some of my fingers, mainly thumb and index finger right. It was pain like I really burned them with boiling water and it got all red and hot and turned into blisters. For a couple of days the finger tips were so smooth that I wouldn't have left fingerprints. Then the blisters opened and there was new, pink babyskin under the blisters and the fingers looked really weird for another three weeks or so. Best ginger/garlic purée ever though.
It was a pink/red variety from Spain, that's all I know. Our supermarket has it only for a couple weeks each year and I love to stock some (as purée and then deep frozen). It's the garlic Ron Swanson would fancy I guess. And if I'm wearing nitrile gloves while peeling and processing it, everything is fine.
