Whilst Stuart probably has more dexterity and intellect in the form of his elaborate car driving and scheming. However, Remy (not Ratatouille you degenerate ass-sandwich) quite probably possesses more strength as he can lift/move objects heavier than he is e.g cooking implements. Not too mention his controlling of Linguini. Remy also has the ability "Summon Swarm" allowing him to gather his family of other fairly strong rats (as seen near the end of the Ratatouille film) allowing them to lift and throw decent sized humans over a meter. Whereas, Stuart hasn't displayed a summon ability of nearly this caliber. Although Remy is strong and has his pack allies, the battle could easily be swayed in Stuart's favor if he can bring the battle to a more desirable location (like his house or an other indoor residential area) as he has far more experience in a domestic terrain, having been adopted into a family, as opposed to Remy's street/sewer rat upbringing. vely, it could very easily be used to defeat Remy with relative ease. However on the other end, if the battle is fought in a sewer or other dank place, Remy would be able to crush Stuart like a bug. Stuart's intellect may prompt him to simply bait Remy with poison or utilize a rat trap. But as demonstrated previously, Remy has a very good nose and would have no trouble sniffing out the poison. If Stuart were to have a chance at beating Remy, he'd need to use his intellect to create a gadget of some sort to incapacitate him. If we're taking in human involvement, Remy and Stuart both have humans under their metaphorical belt. However, Stuart can speak comprehensible English and converse directly to his humans. Whereas, Remy can only converse with Linguini using his actions and Linguini's apparent exert charade skills. If Stuart were to take out Linguini, Remy's connection to his human posse would be dampened. All in all however, I still believe Remy would be the victor of said fight.

Also, according to Quora, rats can, and do, kill mice, a behavior known as muricide. Muricide is a form of predatory behavior: rats hunt, kill and eat mice. A study done in 1956 showed that 71% of wild rats and 12% of domestic rats will kill mice. Rats will eat anything, including mice, to survive.
