Additionally, you shouldn’t put the chopsticks across the bowl. It can also be rude. Just put the chopsticks on the holder or if it came in a paper packet fold the paper to make a holder.

I agree. I like my salmon dunked in soy sauce, no matter how good it is. I crave salt

Most places have an entryway to remove your shoes, so you don’t have to take them off outside. And usually you wear slippers inside and go barefoot on tatami mats.
