changing color isnt solely a defense mechanism. Thats only a very small part of the whole thing. They do it to communicate, to adapt to new temps, to indicate their mood, etc
Chameleons are known for their ability to change colour, which can allow them to blend in with their surroundings. If we can see them, it means that they have not blended in their surroundings well enough to fool us.
They are very high maintenance when they are young, and even as adults require very acute care; especially with humidity. Without due diligence their skin gets all messed up and they stop eating until they starve themselves.
