It’s generally hyperbole, such as “I’m so hungry I could eat a horse!” Or “I’m starving” or “this is killing me.” However- here’s where knowing a fact and being “smart” are different: every major (American) English dictionary literally has this usage in the definition of the word. In this usage the definition becomes one of eager anticipation. Somewhat like how certain sayings translated to or from foreign languages using word for word direct translation often yield nonsense. If you examine each word on its own it would seem to make no sense, but with a little knowledge of English vocabulary the meaning is: to eagerly anticipate and event.

But let’s step away from that definition. Let’s pretend it doesn’t exist. What is the definition of “wait” on its own? Essentially to stop and not act. Ok... so if I say “I can’t wait...” using only this definition- I am saying that I cannot be still and inactive. Whatever activity I perform, talking about it, speculating, looking for rumors or previews, or otherwise “preparing” like making plans etc- I am not “waiting” because I’m moving and active. So that hopefully helps it make more sense to you.
