Probably because it's a simple and cheap method to demonstrate a complicated idea in a way that everyone can understand. Granted it's completely wrong in almost every way but it's simple and for the purposes of a movie it's sufficient.
Can't really blame them.
I've always wanted to visualize it with... more... layers... and have seen a few, but there is no way to fucking describe it in less than a 10 page essay.
Interstellar came surprisingly close with the idea of the tessaract, but that's also where the movie went off the fucking rails.
