We wouldn't need to if a lot of guys didn't feel entitled to a date just because they have shown interest in a woman.

We come up with excuses because most men don't take a simple 'no' as an answer

As others have said- she doesn’t need to give you a reason, and if she does she’s probably trying to be polite- maybe not to save your feelings- but because experience has taught her that a rejected man might get aggressive, abusive, even violent; and baring that may still persist so long as he thinks he has some way to argue why she should give him a chance.

Her reason to not date you isn’t generally important to you anyway. If she’s brutally honest and she just thinks you look creepy or she thinks your hands are too small or whatever- what are you going to do? Look less creepy to her? Get bigger hands? Change your hair color or whatever to suit her? And then what if she says she doesn’t date guys who would change on the whims of others either? I guess you could debate her- but does she really want to discuss with a possible stranger the reasons why she should have a different opinion about dating you? If she wanted a debate she wouldn’t have brushed you off would she?
