I'd heard of the series but never read the books or played the games. My opinion is:

The bad: I think it's a bit overhyped.

They don't really explain a lot of things to you (or haven't so far) so at times it's just kind of "this is like this because reasons." In the future maybe they'll explain the details but for now you just kind of have to accept things. The timeline is similarly not clear-cut on occasion.

A lot of people have said the series feels like the main character is on a constant string of fetch-quests, and that is pretty much true. But that's also the nature of the type of story they're telling. The main character is more or less a mercenary of monsters so him not stopping to deal with monsters would make him decently bad at his career

There IS a main storyline, but it's fairly fragmented at the moment
The good:
If you like fantasy stories and "medieval-esque" settings with magic and monsters then the witcher is looking to have a very rich world. There are several creatures and characters, various locations and the politics and history between them. They've only scratched the surface of it all in the first season I guarantee.

They seem to have decent special effects, music, etc. They have several fight scenes if action is your thing. They don't seem super leery about potentially sensitive things (sex, violence, Gore, self-harm, etc) as a forewarning, though.

It's honestly worth a shot if you're at all intrigued by it. Temper your expectations and at the very worst you'll be pleasantly surprised.
Agree with @xvarnah. If you have knowledge of the books or games it’s more enjoyable but without any of that knowledge, it just puts you into a world without fully explaining the rules of it OR over explaining the rules of it. It somehow does both. Overall it’s enjoyable but that ending is so abrupt.
I watched it with no knowledge of the books or the games except that they existed and I absolutely loved the show. In fact it's because of the show that I now want to get into the books and games! I would definitely recommend it. Its immensely enjoyable. I also had my doubts before starting since its was so overhyped but I'm so glad I watched it in the end. It's great
