It’s still dubious. Due to the topographical differences being so minute compared to earths size, from a distance one would need to be to see the entire earth in a single view, the surface would still most likely appear pretty “smooth” as it does now. We don’t really need to imagine the hypothetical there- we have seen other planets which lack baste surface oceans and/or even lack thick atmospheres. Mars is like this and hosts a mountain over 72,000 ft high- that dwarfs Everest (highest in elevation), Meuna Kea (highest base to peak) and Chimborazo (furthest peak from the center of the earth.) the tallest known geological feature in the solar system does not change the way Mars “looks” as far as its shape because 72,000 feet just isn’t a huge deal on a planetary scale.
