I just don't get why people even feel the need to correct them in the first place. I'm a cis-gender male and anytime somebody slips and says, "Sorry, ma'am," I just say, "No problem," and that's the end of it. I understood his intention, he understood that it's not a problem. Sure that person made a mistake, but that distinction isn't important enough for me to care. It's meaningless, it changes nothing about the transaction between us. Even if maybe he thought I looked and sounded feminine, that's a pretty sound reason to assume that I'm a female. Again, no big deal. I'll never see that person again, ever. Why be so protective of something so trivial, especially with strangers? Maybe I'm just a little too lax, and maybe it means a lot more to others than it does to me. I really don't know, I guess.
Just a thought: their gender is probably more of a touchy subject to them than it is to you. They've fought for their right to use it and I think you're correct; it means a lot more to them than it does to you. If someone accidentally called me a dude though I'm a cis chick I probably wouldn't fix the mistake, like you. It's different for everyone though.
This is a heartwarming story, but I also feel like some of the people that got angry when people referred to Jenner as Bruce were also the ones that started referring to Trump as Drumpf. I know a few people guilty of that and the inconsistency bugs me.
