Aren't you not supposed to touch baby birds and such? Their moms will reject them if they smell like humans, but I don't know the story and it's really cute

That's somewhat of a myth although it is possible, but most birds like that have relatively weak senses of smell.

No. It's not. I have experience with baby birds. The mothers get ansy, but they won't reject the chick.

A turkey hid her babies near my house one day and my cat caught a bunch of them. She brought 3 of them inside for me to eat with her (sweet isn't she). They were hurt so I kept them for a few days. The mom would wander around (I don't know if she knew they were alive) and when I let them go she accepted them instantly...almost seemed happy to see them.
