You know what else is GMO? Anything that's been selectively bred for certain traits.

While that's technically correct, it's not what people mean when they say GMO. It's like, if someone said "don't eat those cherries someone sprayed chemicals on them" you wouldn't respond by saying "everything is a chemical! The cherries are fine!" You implicitly understand they mean harmful chemicals. Similarly, when someone says GMO they refer only to organisms that have been genetically engineered, which is different from selective breeding.

Yes but as far as I'm aware GMOs are not harmful to humans, just like gluten
OK, so: GMOs are unlikely to hurt you if you eat them. The true harm to worry about in GMOs is the potential for abuse of patented strains. Selectively bred organisms cannot be patented, but GMO strains can. Some corporations attempt to make their patented strain the only strain of a particular plant available (see: the Roundup Ready debacle), and not only does this produce a potential monopoly on the plant, it decreases genetic variety, which is ESSENTIAL for survival (see: the agricultural factors influencing the Irish Potato Famine).
