I grew up eating well done meat, so I understand it is hard, mentally, to eat anything cooked less than that. But now I eat my meat cooked to medium, and it really does have a much better taste & texture. It's worth a try!

The worst is when I order medium rare and it comes out completely brown to the point it's almost grey
it's not prepared the same all around the world, and you can still ingest some bacteria if it's uncooked (like steak tartare), but even when it's rare it's enough heat to kill any bacteria.
I love medium Rare for burgers and steaks. My husband freaks out if he sees a tiny speck of pink and will refuse to eat it.

Medium rare for me, well done for my husband.
If I can't finish it all, the oven cooks mine as it reheats it so it's well done also- but not a burnt crisp like his would be.
My method is, you can always cook it a little more, but too done can't be taken back.
To be fair, I actually only cook things to well done. Being colorblind, I can't tell the difference between the stages too well and when I do it by time, it still comes out too raw.
