Could have and would have are two very different things. Ancient One and Odin MIGHT have interceded, I seriously doubt Ego would have cared.

Also he did attack, remember avengers one. Thanos was the master mind behind the whole invasion and because it failed he decided to wait until he knew where all or most of the infinity stones were to make certain he won.
