Best guess was that it was running and leaping to escape and got stuck. Second guess would be it died somewhere else and someone hung the skeleton for a picture?

Always wondered how come the bones haven't fallen apart? Surely with everything burned off it'd just be a pile?

Cartilage doesn't burn. The bones are calcium sulfate salts which will ionicly fuse together and glued with liquified cartilage.

I think he died in that spot long before the fire. There are quite a few pictures out there of animals with horns or antlers who expired and decomposed right where they got snagged. If the animal was a victim of the fire, there would be a witness ring on the ground below him from his fluids and entrails.
