Take that extra second to compose your words. Think ahead, some interviewers like to lead their questions around a particular subject. Remember your answers, interviewers like consistency.

Regardless of it being over internet, wear pants. Also, bad 911 operators often forget to ask details so make a cheat card (driving directions not just location, medication taken for such calls, is it safe where caller is calling from, etc)
Practice, practice, practice! Google common interview questions for that job and practice answering them a few times out loud. You would be surprised what saying answers out loud just once or twice does.
