Animal glue is made from collagen, which is found in the hooves of pigs, horses and cattle, as well as in the skin, bones and ligaments. They probably got these from a local butcher. The rabbits that supplied them have not been reached for comment.
Just want to note that this armour is an early example of a composite material. A composite material is a material made from two or more constituent materials with significantly different physical or chemical properties that, when combined, produce a material with characteristics different from the individual components. So woven flaxseed fibers bonded with rabbit glue to form a tough laminate. Pretty cool.
