Thought so too but there's a tricky component as a sociocultural marker. Us normal folks say yacht, but the "proper" way to say it for people who actually own one is yak. I swear I'm not pulling your leg, I read that in a book about etiquette and had to check.

oi being wa/wu is similar to Oui being pronounced "wee", its similar characters making similar sounds, Eaux making the O sound is also kinda "normal" like even english borrowed portmanteaux from french and uses eaux to make the o sound there. THe canadian prime minister justin Trudeau spells his name similarly tho im guessing dropping the X is a Quebec dialect thing, either that or adding an X is an english thing done for writing french idk. The s making a sound similar to Z isnt that far fetched either.

The x at the end of french words is just the plural form of said word.
This is due to not everyone being literate and in France the scribes were paid by letter as opposed to by word so they just fucked in all the letters for cash moneys
