You technically are more accurate holding a pistol in one hand far out with your arm as straight as you can get it while looking down the sights. The longer the sight radius the less deviation in where the bullet can go. As for where you place your other hand, it doesn't matter so long as it isn't throwing you off balance.
funfact, a lot of the time, the handle on these guns are in two parts, the second part gets screwed on around the hand. They're nearly always custom made to the individuals grip
