I would say sweet gesture, it smells good and decorates the place, and it's associated with the general conception of romance in our culture, that's why it conveys a message of "I think of you and find you beautiful/refined like these flowers and I want to fuck you nicely". It's also the sacrifice of a living being, but less messy than a cow's beating heart for instance, which makes it significant but pleasant to the eye.
But honestly, any type of little gift is just as important. (a croissant in the morning, a nice cup of chocolate with chantilly after a day of work, or a little something that will remind her of a moment you've lived together... showing that you care and randomly think of her during the day is the main point).

They smell nice, they're pretty and it's a thoughtful gift. Much nicer than a cows heart imo.
Lavender is for love at first sight or enchantment.
Blue is for the unattainable or impossible.
(I got those two colors blended into my last rose tattoo because when I first met my best friend I fell for him but we couldn’t be together so we stayed friends. 5 years later we were married! I also have the red rose next to it.)
