Dad was a fireman and a fire marshal so trust me I know you should use salt or bakeing soda. Or you know a fire extinguisher. Lol

Yes this honest to God CAN, DOES, and WILL happen if you add water to a pan of grease on fire. It is due to the water evaporating under the grease forming bubbles of steam and as they reach the surface the bubbles explode spewing grease that is on fire so it spreads like if you popped a balloon of confetti. It goes everywhere. So the fire goes everywhere mainly up. Which in turn catches the roof on fire which is highly flammable. because the majority of homes is made of wood.
The kitchen is a very scary dangerous place.
Why do you thinks restaurants make all thier counters in the kitchen metal? It is because God forbid a fire. Breaks out it won't spread as quickly as if they were made of wood.
My stove caught fire once, if not for a box of baking soda, and metal pot lid my house would've burned, I always have baking soda within arms reach when cooking.

One night my 2nd oldest decided in a drunken state "HAY! 3am is the best time EVER to make homemade french fries!" Except we always used crisco to fry things and all we had that night was vegetable oil. Which he never used to fry with before. Well one thing leads to another And less than 30 minutes later my brother goes on my parents room and knelts down beside our Dad and calmly ask "Dad where his the fire extinguisher?" My Dad says in the laundry room behind the door. So my brother says thanks and leaves. My Dad goes back to sleep but instantly is waken by the simple question my mom asked him. "Do you smell smoke?"
My Dad puts 2 and 2 together and runs into the living room and even though the kitchen is tucked out of site he could clearly see flames and smoke. So he rushed in to see my brother tring t work the extinguisher my dad grabs it from him and puts the fire out
My brother in his drunken state hested the oil than peeled and cut the potatoes and set them into water while he cut the rest. Than as the oil was BLAZING HOT! He just calmly grabs a hand full of fries WITH WATER and TOSSED THEM INTO THE OIL!! which made it catch fire and splash our cabinets which caught fire than he tried to use salt and baking soda but nothing worked so he went to ask for the fire extinguisher. Lol
Funny thing is that nonchalant way of asking for the fire extinguisher was the exact same way my brother 2 yrs younger than me asked for it when he set the old camper van on fire in our front yard.
Well he is a truck driver and a biker lol. He was also once a bouncer than a welder. He had jobs were if you didn't keep your cool it ment someone could get hurt so yeah lol he is pretty chill.
