The fat side of me says I wonder if the extra fat on the heart will make it taster if fried or grilled? Or maybe that is the cannibal side of me. 0.o

Jim’s are largely heart meat. In that case fat would be trimmed and the meat dried. I could also see a king smoking process like brisket having decent results on a fatty heart.
