It clearly states on the bottle: Refrigerate after opening. Restaurants can leave it on tables because of how frequently it will be used compared to how infrequently it gets used in the home.

I don’t think I’ve ever been in a restaurant that didn’t have ketchup. Why would they not have a readily available and cheap condiment on hand in case their customers want it?
