The Egyptians did try to map the brain, the start of modern psychology, so this is pretty cool!

How did they try to map it if they always scrambled it up and pulled it out through the nose?

Yeah, they only scrambled it for the process of mummification. They obviously did rudimentary dissections before; otherwise how else could they try to master the mummification process?
