If it was in a bar fight it's more likely he was punched in the head, or knocked over and cracked his head on a hard surface killing him rather quickly via brain injury.
Then again, it's also possible he was just straight up stabbed by a knife or broken glass/bottle which would have been quite painful as it's a rather slow way to die compared to the other. Unless it was in a vital area like the neck or straight in the heart it would likely take enough time for the adrenaline to die down and make him astutely aware of his situation.
