There are many other dishes that they eat while the animal is still alive, it's considered a delicacy. The reason behind it is more towards traditional customs and believing it's good for your blood sugar when consumed raw.

If it helps, the practice is deadly as people suffocate if the suction cups on the tentacles latch onto the throat. They tie up the tentacles and the person tries to swallow it whole. Many people die because it gets lose and grabs your esophagus, unable to swallow or breathe.
