I should also mention that while it looks great, the taste is what's expected. I thought the spices would work wonders, it's a generic duck/ goose taste.
Crab stock for pre-marination (5hrs). Stuffing includes Brown sugar, salt, and an onion (green). Spices in rub form include brown sugar, worcester sauce, cayenne pepper and white pepper powder, salt, oregano/ coriander/ garlic/ ginger powder mixed with 1 tbsp soy sauce (mixed into a paste). Remove the duck from stock, then apply rub, paste and insert stuffing. Leave overnight. Next day, hang the duck to remove excess fat and water (onion inside overnight will start rendering some of the fat).
