My history professor told us a story of when he was studying to be a doctor (which obviously didn't work out, but that's not important) that he used these in his anatomy classes to cut open cadavers. He said that he cut himself so many times on accident because they're so sharp.

I want to know more about why he didn't finish his dream of being a doctor. I find that very important.

Maybe it's got something to do with how he kept cutting himself.

But I believe they are also extremely brittle and can shatter easily.

Luckily however, the only situation where this would truly be a problem would be if you dropped it or tried to cut something really hard like bone.

You are correct in that it is brittle but always breaks with a sharp edge.

does it hurt less than a steel knife when you cut yourself?

If you have a properly shaped obsidian blade, you probably won't even feel the initial cut because it can be made so sharp that it actually separates your cells from each other as opposed to crushing them as it cuts.
