Everyone should watch it, not just anime fans. Also one of the few that's better when dubbed.

Yeah, Cowboy Bebop transcends anime. The "Green Bird" sequence is one of the single most gorgeous extended shots of all time.

It's probably the only anime I know where the director prefers the English dub to the Japanese one.

A big part of the reason is how heavy the American cinema influences are in this anime. It just feels more natural for them to speak English.

If you think that this is too gory, you should try Future Diary or something else like that. Cowboy Bebop is very tame on comparison.

I might be mixing up the animes then. Does the first episode have a train and someone's hand gets cut off or something like that?

Nah. I think you are mixing up animes. Like, there's definitely blood in Cowboy Bebop, but the blood is pretty realistic, and it's never overally graphic.
